NoNuts - Cookies

The kids and I just baked a batch of yummy Golden Pea Butter Cookies. My son has a life-threatening peanut/nut allergy, and therefore can't eat anything with nuts. Guess what my favourite cookies are? PEANUT BUTTER. I was so happy when I stumbled upon this nut free product at the grocery store. It's a peanut butter alternative (I would never send my son to school with it as it looks and smells just like peanut butter, could be confusing). Unfortunately Mr. B didn't like the taste however I thought if I used the pea butter in a cookie he might like it. I pulled out my old favourite Peanut butter recipe and just substituted the Pea Butter. They turned out great! My son gobbled them up. Even DH who was very skeptical said they tasted like the real thing!
